First of all, make sure the eggs are at room temperature. This is really a big deal. If you have a good wrist action, you can stiffen 3 egg whites in about 2 to 4 minutes.
Use a big and clean bowl, any fat, egg yolk or other other traces will make it harder, if not impossible to stiffen the whites.
When you start to whisk, you will will see that the egg whites will start to stiffen after a couple of minutes.
